Lemon Balm is a perennial plant from the family of the Lamiaceae, class of the Dicotyledons. It originates from the Mediterranean region and the southern parts of the Old Continent.

Melissa Officinalis has been known for its beneficial properties for centuries. It is beneficial for fighting sleepless nights and stress. In Bulgaria it is also known with the names bee licorice, matorka, matoknik, beekeeper, lemon. The last name is inspired by the fresh smell of lemon. The beekeeper comes from the fact that Lemon Balm is a highly nectariferous herb and attractive for bees.

The useful and widespread herb grows from 30 to 70 centimeters in height, sometimes it grows up to 1.5 m if you cultivate, water and fertilize it well.

Its stems are with a lot of offshoots, four-edged and tall, slightly mossy from the hairs on them. Its leaves are green, elongated and fresh.

Lemon balm has abundant flowers in white, pale pink and pale yellow. It is valued mostly for its petals, ideal for seasoning various dishes and culinary delights, as well as as a source of essential oils in cosmetics and perfumery.

The petals are torn or cut as soon as the herb is 15 to 20 centimeters high and used fresh for seasoning. You can dry them in a place with shade, ventilation and dryness. To use its essential oils, harvest the Lemon Balm during the flowering phase and use all the parts above the ground.

Lemon Balm flowers from June to September.

It likes full sun and well-drained humus.

It has a good resistance to the low temperatures in winter in our country. It is highly adaptable to different conditions and is not a fastidious plant.

Sow it directly outside in the yard or in the garden after the last days of March until May, as soon as the frosts have passed. You can grow it in suitable containers at home, on a balcony, veranda, or terrace.

Transplant the seedlings to their permanent place outdoors in the first days of June, when the Lemon Balm has 3 to 4 leaves.

Do not dig the seeds into the soil, only press them in the soil and sprinkle with a thin layer of soil you have.

Leave a distance of 40 centimeters from row to row and 30 to 40 centimeters from plant to plant.

For the good development of the plants the distance between the rows should be 40 cm and between plants 30 - 40 cm.
