A great root vegetable from the Cruciferous family, which looks like wild cabbage, but surprises with its rich content of vitamins and minerals and is highly valued for its great health and dietary properties that it exerts on the human body.

The history of Кohlrabies dates back to the mid-16th century in Germany when the biennial vegetable plant was first described. It is no surprise that its name is derived from the German word "kohl" meaning cabbage and "rabi" meaning turnip. In appearance, the vegetable resembles cabbage, and its taste is similar to that of turnips, but a little sweeter.

Кohlrabi has a pear-shaped shape that gives the illusion that it is a plant that grows underground, but in fact, it grows freely above the ground. It is characterized by oblong voluminous leaves, and its fleshy part is juicy and crunchy. The main characteristic of this vitamin-rich vegetable is that its root is mainly used for food.

The root plant is popular for consumption in Central Europe and Asia, and two types of it are distributed in Bulgaria - large Кohlrabi and small Кohlrabi.

The two species differ in colour and nutritional properties. The large Кohlrabi is distinguished by a violet-bluish colour of the bark, while the small one - with a light green bark. In general, this vegetable is considered extremely useful precisely because of its content. A rich source of Vitamin C, as well as vitamins A1, B1, B2, B6, minerals and potassium. It is considered a diet food, not only because of its low calories but also because of its zero fat content. And despite their great properties, it is they that distinguish the two species common in our country. The small Кohlrabi is richer in nutrients than the large one, it is considered the more dietary option and the tastier.

With its impressive vitamin content, the cruciferous vegetable is highly recommended for the good maintenance of natural immunity. In addition, it is a great source of dietary fibre, which, apart from making it an ideal choice for any diet menu, also makes it a recommended food for people who suffer from stomach problems. It has an extremely beneficial effect on the intestines and its consumption has reduced the risk of colon cancer.

Alabash is mainly consumed raw. The reason is that during heat treatment, the heat destroys a large part of the many useful substances that are contained in the vegetable. An example of a tasty, useful (even dietary) and extremely easy dish is a simple salad with Кohlrabi. You just need to peel the root, cut it into smaller or larger pieces, depending on your preference, and season with a little salt and olive oil.

Although the root of this plant is mainly consumed, it is good to pay attention to its leaves, as they contain many useful and nutritious substances, such as vitamins and carotene. The young leaves find their place in cooking cooked or as an addition to dishes and salads.
